This simple recipe is a great way to include more of this nutrient packed, cancer-fighting vegetable to your diet! And tastes surprisingly close to yummy mashed potatoes!

Serves 4 (as side dish)

1 head of cauliflower cut into medium florets
1/2 tablespoon of organic butter
1/8 – 1/4 cup organic milk or non-dairy product (soy or almond)
sea salt to taste
black pepper (optional)

Steam the cauliflower until just tender. Place cooked cauliflower into food processor. Blend/chop the cauliflower until it begins to incorporate. Add the butter, milk, and salt. Continue to blend until it reaches the desired consistency.

Tip: To make this vegan, use flax or olive oil instead of butter.
